of Vegetable Soup

medium potatoes

- butter or margarine
900ml
water
200ml
cream

vegetable or chicken stock cubes. |

Fruit
Sorbet

450g
fruit e.g. apples, raspberries, blackberries,
currants, etc.
15ml
lemon juice
60g
brown sugar
150ml
water, fruit juice or wine. |

Chop
all the vegetables and saute in butter for 5 minutes.
Add stock.
Bring
to the boil & simmer for 20-30 minutes or
until potatoes are soft.
Cool
slightly. Liquidise until smooth.
Add cream.Garnish with chopped parsley. Serves
6-8.
*Add
4 (15ml) scoops of
Vitapro per serving to provide an
extra 18g of First Class Protein. |
Cook
fruit until soft. Blend to a smooth purée.
Add
remaining ingredients.
Freeze.
For a lighter sorbet whisk in a beaten egg white
before freezing.
*Add
6 (15ml) scoops of Vitapro
to fruit purée to increase protein content
from approx 4g to approx 27g. |
